Small aperitif bites rolled up like puff pastry snails, very fun to make with a good taste of smoked salmon. Serve as desired with pestos, tapenade…and offer an assortment.

Sun tarts and other filled puff pastries always make a great addition to aperitifs. I offer you here a version in small spirals, more easily made if you find a rectangular puff pastry rather than a round one. Here garnished with smoked salmon for flavor, and a little fresh cheese so that it’s not too dry. I used Saint Moret because it is an easy-to-use base at home, but you can replace it with Philadelphia, fresh squares or fresh goat’s cheese. The only difficulty with the recipe is to add enough to provide a little softness but not too much otherwise it will drip a little when cooking.
