Basil -cooked and fresh strawberries compote


A strawberry compote with the texture in the mouth of fresh fruit, is you tempted? This is what I offer with this recipe. With an optional small basil scent if you wish.

Cooked strawberries really have an unparalleled taste. But the strawberry compotes are sometimes very liquid or else you have to do them cooked for a long time so that they reduce or add apple which is a shame! So I offer this recipe with strawberry in two textures. Of the Fresh strawberry piecesso raw, are added at the last moment in the strawberry compote.

And optional depending on your tastes or if you find Fresh herbs : Add the basil leaves at the end of cooking the strawberry compote (or mint, it’s good too) which will slowly infuse while the preparation cooled.

Note that the amount of sugar is indicative because it depends a lot on the quality of your strawberries, if they are very sweet or little for example at the start of the season. When they are ripe, without sugar it’s perfect!

The main steps: 2/3 of the strawberries are cooked with a little sugar and lemon. We infuse the basil. When serving, we add the rest of the raw strawberries.
