Bear and leek garlic quiche

This bears garlic quiche embellished with a little leek is the spring pie!
Here is a great way to use bears as soon as the season arrives. Here with a pan -fried leeks. Simple and good.

Bear garlic information

Bears garlic (or Allium Ursinum) is a small herbaceous plant that Pushes in the slightly damp undergrowth. It is often found in the wild but it grows very well in the gardens in half-shade in not too hot places.

The harvest is done in April – May With small variants depending on the region and winter temperatures or the heat of spring. You can find it or buy it from your market gardener.

Bulb, stem, leaves, raw or cooked, everything is eaten. My mother-in-law dries the flowers she uses as dried garlic or the parsème on her compound salads.
The leaves are used in quiche as here, but also in pesto, in simmered or minced dishes like a fresh grass on a dish…

I invite you here to use Gold leaves roughly minced bears. And I add quickly pan -fried leek. They are not too marked in taste but will give a beautiful texture and from lamb’s lettuce to quiche without taking precedence over the star ingredient of our dish.

I kept a few leaves to make a nice decor But taste that has no interest. Although it makes you think of another plant whose name I will hear here! I found that it gave a little chic side to my quiche. In any case perfect for a post on Instagram.

If you want a much more marked bear’s garlic tastemake a quick pesto with bears by mixing a second bouquet of leaves with a little garlic and olive oil. Then mix this with your preparation.

Vary vegetable associations. Replace the leek with spinach or nettle leaves, add bacon or salmon, cheese like goat or county.
