Compote of cooked and fresh strawberries with basil


Would you like a strawberry compote with the texture of fresh fruit on the palate? This is what I offer you with this recipe. With the addition of a little basil scent as an option if you wish.

Cooked strawberries truly have an unparalleled taste. But strawberry compotes are sometimes very liquid or you either have to cook them for a long time so that they reduce, or add apple which is a shame! So I offer you this recipe with strawberries in two textures. Of the fresh strawberry piecesraw therefore, are added at the last moment to the strawberry compote.

And as an option depending on your tastes or if you find fresh herbs : at the end of cooking the strawberry compote, add basil leaves (or mint is good too) which will gently infuse while the preparation cools.

Note that the amount of sugar is indicative because it depends a lot on the quality of your strawberries, if they are very sweet or not very sweet, for example at the start of the season. When they are ripe, without sugar it’s perfect!

The main stages: We cook 2/3 of the strawberries with a little sugar and lemon. We infuse the basil. When serving, add the rest of the raw strawberries.
