A very gentle mousse with milk chocolate, with, of course optional, a touch of fleur de sel for an ultra delicious contrast.
This simple recipe is enhanced by two ingredients that differ from classic chocolate mousse. In my recipe, which is not very different from most chocolate mousses that everyone makes at home (see the recipe here), I replaced half the quantity of dark chocolate with milk chocolate. And added a touch of fleur de sel, a little in the mousse and a little sprinkled on top when serving. This is of course optional, you can just make a mousse that is half dark chocolate and half milk chocolate (with only 3 ingredients: the two chocolates and eggs).
This recipe came from two desires:
One of my daughters has difficulty with desserts too chocolatey. I know, it may seem absurd to some, but yes, we may not really like dark chocolate. Yes yes 🙂 So he likes the mix with au chocolat.
The memory of a chocolate mousse bar tasted in Lyon in the halles Bacalan, right next to the wine city. A fabulous place to do your shopping with many stalls with fabulous products. But there are also caterers and restaurateurs. You can take away or eat on site, each member of the family or group being able to help themselves from a different stand or compose the menu as you wish with dishes from very different backgrounds. Very nice. Anyway, to come back to the chocolate mousse, we found a chocolatier there who offered chocolate mousses with different origins or percentages of chocolate, including one with a little fleur de sel who left us with an extra memory.
And for gourmet lovers of chocolate mousse, I offer you a recipe that I love with caramelized cinnamon apple cubes. A surprise at the first bite that will delight your guests, the recipe is on the blog of course.

Fleur de sel is optionalyou will then have a classic chocolate mousse that is more rounded and less chocolatey thanks to the milk chocolate. Adjust the quantity of flower salt according to your taste. A pinch in and a few grains sprinkled on top when serving is good in my opinion but you may prefer more or less. Here 100 g of chocolate and 3 eggs for 4 small bowls. Double the quantities for 6 large portions For example.
