Traditional recipe for crepes Suzette


Here is the traditional recipe, in line with that invented by Auguste Escoffier for Prince Wales and future King Edward VII and the charming Suzette. Not flambéed with Grand Marnier but with a few drops of orange or mandarin alcohol (including in the dough) and orange butter.

The real Crepe Suzette is therefore not flambéed with Grand Marnier or other orange or mandarin alcohol. as is often done today. Or rather, we often call crepe Suzette these crepes with a caramelized orange sauce and flambés (see my recipe here) – which I’m completely crazy about – but in reality, it’s not the original recipe.

If we want to be precise, it is with this orange or tangerine butter (but tangerines tend to disappear) that we must make real crepes Suzette. Butter, sugar, alcohol, citrus. The way you do it is also important: once the pancakes are filled with this fragrant butter, fold them into four and serve them piping hot. Serve very hot.

We don’t forget the alcohol though, there is some in the pancake batter and a few drops before enjoying on the hot pancake with the melted orange butter. Orange or tangerine alcoholyour choice of Napoleon mandarin, Grand Marnier, Combier, Cointreau or Curaçao. Originally Escoffier used Curaçao.

It’s all a question of taste. Traditional with orange butter or less conventional but widely appreciated flambés. Both exude subtle orange flavors.

Prepare the Suzette crepes

Make the pancake batter and leave to rest for 1 hour. Candied the zest and prepare the orange butter. Cook the pancakes. Before tasting, stuff the pancakes and put them in the oven. Serve bubbling.
