Traditional suzette pancake recipe


Here is the traditional recipe, in line with that invented by Auguste Escoffier for Prince Wales and future King Edouard VII and the charming Suzette. Not flambé to the Grand Marnier but with a few drops of orange or tangerine alcohol (including in the dough) and an orange butter.

The real suzette pancake is therefore not soaring in the Grand Marnier or other orange or mandarin alcohol As is often done today. Or rather we often call pancake suzette these pancakes with a caramelized orange and flambé sauce (see my recipe here) – of which I am completely crazy – but in reality, this is not the original recipe.

If we want to be precise, it is with this Orange or tangerine butter (But the mandarins tend to disappear) that we must make the real suzette pancakes. Butter, sugar, alcohol, citrus. The way of doing things is also important: once the pancakes were filled with this flavored butter, fold them in four and serve them burning. To serve very hot therefore.

We do not forget alcohol, there are in the pancake dough and a few drops before tasting on the hot pancake with melted orange butter. Orange or tangerine alcoholas desired Mandarine Napoleon, Grand Marnier, Combier, Cointreau or Curaçao. Originally Escoffier used curaçao.

Prepare the suzette pancakes

Make the pancake dough and let stand for 1 hour. Have the zest confit and prepare the orange butter. Cook the pancakes. Before tasting turn the pancakes and pass the oven. Serve Bullant.
