Recipe for light invisible apple cake without butter


A recipe without butter, with olive oil, brown sugar and semi-wholemeal flour for a cake that is tender thanks to the apples and very soft.

Do you ever do tests in the kitchen and lose the piece of paper with the quantities so you can make a dessert that you like? Me all the time. I had made this cake without butter, too happy with myself, then oops post-it lost and I switched to something else telling myself that I would have to make it again, writing everything down in my notebook, because yes I have had a notebook for 2 years where I write down everything I cook. Lack of rigor sometimes, but hey…

And there, saved, one of my colleagues arrived at the office the other day with a cake saying to me, Hey, I made your cake again without butter, we love it. And bingo, I got my hands on my super easy cake recipe with olive oil, semi-wholemeal flour and brown sugar. I was so happy.

I have made it here as an invisible cake with lots of thin slices of apple, it holds together very well and remains very soft. A delight.

A little ultra-delicious touch, I put brown sugar in my greased mold before pouring the dough, the result is great. Caramelized to perfection around, soft inside.

Here I offer you the recipe for 6 in a cake mold or for 4 in a soufflé mold for a pretty little round cake.

Some information for the recipe

  • Olive oilfor a cake without butter is the starting point for this recipe
  • Semi-wholemeal flourideally choose T80, or failing that T65. Spelled flour which has very digestible gluten is also perfect
  • Brown sugarso much better in cakes
  • Cinnamongoes well with apples and somewhat masks the strong taste of olive oil
  • Baking soda : I prefer a bicarbonate and yeast mixture because the bicarbonate makes the preparations easily digestible but also the cakes are softer and more puffy.
  • Which apples for this cake ? I used Chantecler which cook well and become soft while retaining their texture.
  • For a little gourmet touch, line the bottom and edges of the mold greased (butter or oil to stay 100% butter-free) with brown sugar before pouring your dough. To try with sugar pearls next time, what do you think? This in classic molds of course, otherwise quickly hop into an ungreased silicone mold.
  • Smaller cake as in the photo for 4, to prepare in a soufflé mold with the following quantities: 2 eggs, 95 gr of flour, 60 gr of brown sugar, 40 ml of olive oil, cinnamon and yeast or yeast/bicarbonate, 3 large or 4 small apples
