Delicious plums, Reine Claudes here but you can prepare this very quick and easy tart with plums or plums, your choice.
If you like rustic pies, then plum season is ideal. A shortcrust pastry (homemade or not ;-)), a little semolina (or almond powder if you prefer), some beautiful fruits cut in half, a few grains of brown sugar and that’s it.
First the pie crust. No particular problem there, you can use a shortcrust pastrya shortcrust pastry or even a sweet dough.
However, avoid using puff pastry. As you often do not have as much filling or no creamy filling as for an Alsatian tart with almond cream or simply an egg – cream – sugar mixture, the puff pastry could risk swelling too much.
You can flavor your pie crust with, for example, cinnamon or Provence herbs for your savory pies.
So that the fruit juice does not soak the doughwhich then risks not cooking well and resulting in a pie that is difficult to serve, several solutions: Sprinkle your pie crust with fine semolina or oilseed powder: almond powder hazelnut, pistachio…

I prefer fine semolina to almond powder, for taste, but be careful you need to use very little.
Just enough to be able to absorb the cooking juice from the plums but not too much otherwise it becomes too heavy. If your Reine-Claudes (or mirabelle plums, plum plums) are very, very ripe, add a little more than the quantity indicated in this recipe.
Quetsches, Mirabelles, Reines Claude are the three best-known varieties in France. You can use the holes for this recipe even though I chose Reine Claude. Very distinctive in their size and color, all three have unique characteristics that distinguish them from each other.

We are seeing more and more new varieties like the big one pomegranate plum which really has a beautiful pomegranate color. I do not recommend it because when ripe it would release too much juice.
For lovers of rustic pie, I offer you a galette as the English speakers say with peaches and redcurrants.

Delicious Reine-Claudes here but you can make this tart very quick and easy. To be combined with other plums: mirabelle plums or plums.
