Soft apricot and peach cake

This recipe was made the first time in a hurry then redone to obtain the right proportions of ingredients before offering it to you. Why so quickly? Because that’s exactly where this recipe comes from, the gastronomic critic of whom I don’t miss a beat François-Régis Gaudry had shared a soft apricot cake some time ago, an ideal recipe for the holidays or busy pastry chefs since he suggested putting all the ingredients together, mixing them roughly before adding the apricot mumps. That’s all. Quickly prepared, quickly cooked, quickly eaten. And this dessert reminds me so much of the apricot upside down cake that my mom made for me when I was a child for a snack. I have to ask him for the recipe.

So there you have it, some information on the recipe

  • It’s a quick recipe where we pour all the ingredients into a bowl, mix them roughly. It’s okay if the dough isn’t completely smooth. We are neither trying to whiten the eggs with sugar as is often the case in cakes, nor to sift the flour, nor to obtain a perfectly smooth dough.
  • For the fruit : I suggest an apricot and peach mixture, but you can vary. Peach or nectarine, white or yellow. Apricot and peach or just one of the two… or even plums.
  • Sugar : I use almost only brown sugar now but you can replace with white sugar. If your fruits are very sweet, you can reduce the amount of sugar.
  • Flour : Here a T80 semi-wholemeal flour that I prefer but I tested this recipe with white flour (T45 or T55) and it works very well.
  • Butter at room temperature is important because here we roughly mix all the ingredients. If you use cold butter you will need a food processor.

Ultra soft but also quite rich, I admit that I put less and less butter in my cakes, in favor of olive oil, for example in my currant and blackcurrant yogurt cake. But damn is it good.
