Soft orange upside-down yogurt cake recipe

Orange or flaming blood orange, this ultra-fragrant and not too sweet cake is ideal for snacks or even breakfasts.
I have always found orange cakes decorated with slices sublime. A real ray of sunshine that illuminates the end of a meal or a snack. To find the perfect recipe, I wanted an upside down cake that was light enough and almost candied orange slices to be easy to cut or eat.

So here is some information about the recipe

  • Oranges or blood oranges I offer you here the recipe using blood oranges but you can make it with normal oranges of course. However, they are often larger, which is why I have given you the quantities in ml.
  • Organic As we use the zest, choose organic oranges preferably
  • Upside-Down Cake The secret of this recipe is to line the bottom of the mold covered with parchment paper with orange slices candied in a syrup of orange juice and sugar and also topped with this ultra-reduced syrup. Once cooked and turned you will have this sublime orange dressing. As they are candied then cooked they remain easy to cut. Then the cake batter has a little zest and oranges too.
  • Yogurt cake I chose a yogurt cake base because in my opinion it is lighter and softer in texture than a cake base for example.
  • Olive oil This has been my favorite for some time, replacing neutral oil with olive oil in yogurt cakes. For the nutritional properties of olive oil and its texture. With the oranges here the taste of the olive oil will not be strong but you can use sunflower oil for example instead.
  • Yeast or baking soda, or a mix of both This blog also has an English version for foreigners, I looked into culinary habits across the Atlantic and they use a lot of baking soda in baking (or a mix of half baking soda and half leavening). And if you do the test, bicarbonate makes the cakes fluffier than yeast. So try it if you want an ultra puffy and moist cake. I left baking powder in the recipe because it remains the main custom in France for our homemade cakes.
