Imagine a golden crumble, melting pieces of pear and chocolate that is still warm, giving the pear juice an ultra-delicious touch. An explosion of sweetness in every bite!

It’s easy, quick to prepare, with simple ingredients, full of possible adaptations and variations which I’ll explain to you just below, and a guaranteed success with everyone, children and adults alike. Perfect for a snack or at the end of a meal.
Who says autumn says seasonal fruits so apples, pears, grapes… Homemade fall desserts are as comforting as you want, often a bit rustic, because what matters are the textures and flavors.
And there you have both. A crunchy-soft texture and flavors to die for. Yes, you will have understood, I am a fan of the pear-chocolate mixture. Soft pears, roundness of chocolate and, icing on the cake, crispy crumble.
Pear + chocolate = It’s the perfect combothe ideal marriage between sweetness and indulgence.
This is actually the first recipe that I made as a child and that I was asked at all the snacks with friends or for birthdays, to remake my yogurt cake in which I added pears and chocolate. On this blog I offer you these flavors in several recipes. This yogurt cake therefore but also an ultra soft cake with a flowing chocolate center with generous slices of pears or a variant of cake with chestnut flour, a quick and easy clafoutis where the chocolate is in the clafoutis dough in a charlotte too, or the mythical belle Hélène pears.


I offer you the classic recipe here but there are several variations so it’s up to you to judge which is the best crumble dough recipe.
Basic crumble dough with a mixture of sugar, flour and butter. And a ratio that can vary from one recipe to another, but basically it’s ¼ sugar, ¼ butter and ½ flour. For my personal ratio, my secret is that I tend to increase the quantity of butter a little and not add too much sugar because the fruits already bring the sweet touch to the dessert.
Variations for flour: only put half the stated quantity of flour and replace the other half with either almond powder or hazelnut powder
For sugar, replace the white sugar with brown sugar, it’s even more delicious (and fewer ultra-refined products!)
Add spices: vanilla, cinnamon, cardamom… Or simply a sachet of vanilla sugar in the quantity of sugar used.
You can also use Speculoos in the preparation, as I like to do when I prepare an apple crumble.
And for an ultra crispy crumble doughI suggest youadd oatmeal (so gluten-free if you completely replace the flour with the oatmeal). It has become my favorite preparation, and also yours it seems, because this recipe is very popular on my site. I invite you to see the dedicated article. I tend to be a little more generous with the amounts of oatmeal and butter.
For the record, for a perfect crumble dough, your butter must be very cold when you mix it with the other ingredients. Go with your fingertips so as not to heat the butter, or simply like me by putting all the ingredients in the bowl of your food processor.

You can prepare the crumble dough in advance and store it in the refrigerator or always have some in the freezer in advance.
For the pears the quantity here is quite indicative because the weight and volume can go from single to double depending on the variety, whether small Williams pears or large Comices.
For the chocolate, choose a dark dessert chocolate or a chewable chocolate. At home we always have Black Foal, that’s what I used here.
Some variations for fruits: you can add apples or bananaaccording to your tastes, or the fruits you have available.
