Arugula salad with peaches and feta, Starter recipe


An ideal fresh salad as soon as summer fruits arrive for the entire summer period. With sweet and salty flavors combining wonderfully
I offer you a salad that I really like, and which I can vary as desired with:

  • here rocket, to vary with baby spinach, lamb’s lettuce or any other salad of your choice
  • yellow peachess make a beautiful contrast of colors and flavors. I also have a weakness for white nectarines. For the quantities I put around ¾ of peach per person.
  • feta is what I prefer. A friend made my recipe with fresh goat’s cheese, I have to try it, I’ll tell you.
  • and for the seeds, I’m a big fan of pine nuts, which I collected when I was a kid under the pine trees in Cannes at my grandparents’ house. I spent hours there crushing the pine cones and the shells surrounding the pine nuts, returning with my hands all black (and my clothes often a little dirty ;-)). Possible variants: cashews, hazelnuts, walnuts, pumpkin seeds, sunflower seeds, etc.

The main stages: We make the vinaigrette with cider vinegar, whole-grain mustard and olive oil and assemble the salad with all the ingredients. Peeled peaches are nicer.
