Have you ever eaten raw zucchini? Well, not completely raw because they are marinated in olive oil and lemon. They become tender as desired, slightly tangy under the influence of lemon.
You can serve these zucchini as a raw vegetable (you can sprinkle parmesan shavings, chopped walnuts or even pine nuts on top), insert them into a mixed salad, or even use them on toast as an aperitif: for example a little beaten fresh cheese, optionally spiced to your taste, spread on a slice of bread with a little zucchini on top.
I find that it is with chives that the vegetable – aromatic herb pairing works best but if you have preferences, let yourself be tempted and test (basil, mint or coriander for example).
